The FishFestival at Van der Valk Hotel Sassenheim – Leiden is the ultimate food event for fish enthusiasts! In collaboration with fish and filleting specialist Arie Kuijt, we present a full evening program with various demonstrations and exquisite fish dishes. Alongside Arie, SVH Master Chef and Executive Chef of restaurant Nest, Rogér Rassin, as well as Japanese Sushi Master Chef Takashi Nakanowatari from OZZO Oriental Restobar, will delight your senses during this spectacular evening.
Please note: The FishFestival is not suitable for children up to 12 years old. During this evening, there will be no children’s menu or entertainment in the kids’ corner. We warmly welcome our youngest guests during the Saturday evening buffets, Sunday brunches, and holiday buffets in the Live Cooking restaurant!

The Fish Festival is not suitable for children. There will be no children’s menu or kids’ activities in the Kids’ Corner during this evening.
Reservations for the FishFestival and/or the FishFestival hotel package in 2027 will be possible via this page once the dates and times are known.

Content
Program of the FishFestival 2026:
6:30 pm – Welcome with fresh oysters and bubbles. On the table: calamarnis with basil aioli and lemon
7:15 pm – Show 1 (tuna) by Arie Kuijt and tasting sessions with sushi chef Takashi
8:00 pm – First course: homemade bisque with crayfish
8:20 pm – Show 2 (halibut) by Arie Kuijt with on the table: mussels with orzo and herb butter
8:45 pm – Show 3 (redfish) by Arie Kuijt + second course: grilled halibut with celeriac purée, antiboise and grapefruit
9:15 pm – Third course: redfish fillet with strawberries, pumpkin and curry sauce
9:45 pm – Fourth course: chocolate mousse with red berries
